Chocolate Almond Meal Cake

Here we go @gillymary. I tested it before I wrote it down, just to be sure!

2 cups almond meal
1/3 cup cocoa
1 1/2 tsp baking powder
1/4 tsp salt
4 eggs
1/2 cup water (but see below)
1/4 cup melted butter (could use coconut oil)
1 tsp vanilla extract (none of your rubbish essence stuff!!)
Sweetener equivalent to 1 1/4 cups sugar. I used honey instead. If you use honey, reduce the water down.

Preheat oven to 180/350
Mix together almond meal, cocoa, baking powder and salt.
In another bowl, whisk eggs, then add butter, honey, or sweetener and water
Add dry ingredients to wet ones and mix well. Should have a sloppy batter.
Pour into greased pan and cook for 25 to 35 mins until knife comes out clean
Stop husband testing immediately and enjoy!!

Gonna try and make this at the weekend! I'm a rubbish cook but it doesn't look too difficult?

Thanks Debs looks good but it will be me not DH who is likely to cut while warm and eat a slice. Think I will give it a go tomorrow will be interesting to substitute coconut oil for butter. Yum
