I forgot star anise and nutmeg. I love them both.

Also there's a couple of Japanese ones I really love. One is shiso: http://en.wikipedia.org/wiki/Shiso It is good in salads and together with tomato and cheese, in addition to traditional Japanese uses.

the other is http://en.wikipedia.org/wiki/Yomogi It is really good fish soup.
I use them in meatballs. I find them in the spice shops, I believe they are a Moroccan spice.
Herb: Tarragon - I use this the most love it, love it, love it. The placegetters would be dill, basil and parsley (flat leaf).

Spices: Hungarian paprika, cinnamon, Australian Wattleseed.
