Cauliflower soup
02 Oct 2013, 17:42
I love to come up with my own recipes and instead of scrambled eggs light, I decided to use that small cauliflower head in my fridge. Read somewhere to oven roost it brings out the sweetness in it and enhance the flavor. Said and done, took away all the green stuff and into the oven at 225C until slightly brown over the top. Cut of all bouquets and into a blender along with 200ml of veggie broth, 1 clove of garlic, 1/4 leek, a piece of a hot chili of choice (I had a Hot Cayenne from the green house), some parsley, 2tbs smetana, salt & pepper to taste, some paprika and chili powder. Blend the heck out of it, let it sit for a while and it get's nicely thick. You can even have three thin bacon slices fried to crisp crumbled over and it will land you a nice bit under 500kcal if you don't eat it all  Kind of hard to calculate in advance how much soup you will turn up with.
Bon Apetite!
