5:2 Diet Recipes

I have found that making a big pan of this on a Sunday sets me up for the week. I weigh the veg & work out total calories (on my fitness pal) and the divide by number of servings. A good big bowl is spprox 65 - 75 calories. And the celeriac makes it really filling.
Basically just chop up veg & throw in saucepan with hot water. When the celeriac is cooked its ready to blend. This makes about 7 servings.
1 x celeriac
6 x medium leeks
1 x celery bunch
1 x bag of watercress (approx 100g)
I add these herbs & spices to water at start:
Lots of garlic
Coriander leaves
Finely chopped chilli
Parsley
Coriander seed and fennel seed crushed with pink peppercorns
