OMG this was amazing. Pardon the US measurements.

I didn't have ground coriander seeds, so instead of using the spices called for, I just used about 2 1/2 tablespoons curry powder and 1/2 tsp cayenne. It was very spicy!!

Because cooking while fasting is hard, I actually made it last night up to the point where you add the chick peas and spinach. Today I just had to heat it up and once it was simmering, I added the chick peas and spinach. I served it with 1/2 cup brown rice (about 110 calories).

it was really delicious and really satisfying - and I have room for the 1 cup of fresh raspberries I bought myself :-)

For UK cooks: cilantro = coriander leaf; 1 cup = 225 ml.
Truly yum! I used spices as per recipe and coconut oil instead f canola oil. Had it with brown rice, very filling and tasty.
oh yum, I'll leave out the cayenne and tomatoes and probably have it with roti or paratha- I'm an Indian bread junky! Thanks for sharing this one Tracie

This looks really great! Keep these coming (vegan especially)...will use coconut oil and brown rice...and pick some fresh organic cilantro.
So I made this one and am now having leftovers two days later...The flavors have had a chance to percolate a bit and I am enjoying a healthy portion during my sole meal of this fasting day in the evening. Really good! I'll look for more good recipes (preferably spicy and vegan). Thanks!

It's been so chilly here in upstate new york, that I made this again this week. We've been eating it with only 55 calories worth of brown rice lately.

I still love this recipe. It's my favorite for fasting days, I think. :-)

ETA instead of spinach, I've been adding a mix of baby kale, baby swiss chard and baby spinach. I have been trying to eat more kale :-)
That sounds yum. Thanks. I will try it too. Re - rasberries- We like them frozen bobbing around in a glass of sparkling wine (on non fast days) yum :-)

I made this last night for my fast day dinner. I skipped the rice and had some pitta bread. The whole family loved it! Definitely one for the winter months.
