285 cals. Arabian Spinach
Big bag of spinach 200 grams (more if you like, 30cals per 100grams)
15ml. olive oil
chopped garlic to taste
juice of half lemon (or more if liked)
can of chickpeas drained
100mls. lowfat natural yogurt
Heat oil in large pan (a wok is the best), add garlic, cook for a few seconds and just when it starts to colour a little add your washed and drained spinach and chickpeas. Spinach will wilt down after 2 or 3 minutes and when its all heated through serve with a dollop of natural yogurt and plenty of lemon juice. Lovely with barley or brown rice on a feed day too.
