5:2 Diet Recipes

I just made myself a rather delicious omelette type thing with some bits and pieces I had left in the fridge and thought it might make a good fast day meal, with/without a slice of toast to go with it.

Ingredients
1 tbs butter
2 large eggs, beaten
1 small courgette cut into strips using a potato peeler (= about 100g courgette)
50 g smoked salmon trimmings
35 g feta cheese, crumbled
lemon pepper or salt and pepper plus herbs of your choice

Melt the butter in a frying pan/omelette pan over a medium high heat. Toss the courgette in the butter until softened. Add the eggs, the salmon and the seasoning. Move the mixture around gently so that all the egg sets, crumble in the feta cheese. Fold the omelette in two and cook for a little longer to melt the cheese.

Serve!

I make it to be 426 cals, 31.91g fat, 6.12g carbs, 28.61g protein. So, it makes a good low carb meal.

If you added a standard slice of wholemeal bread/toast, that would add 67 cals, 1 g fat, 12.26 g carb and 2.37 g protein, making a total of 493 cals.

Sounds wonderful. I bet it would be good on top of pizza with a pint of beer. Toss in some fried potatoes on the side. Can you tell I'm fasting today?
