Surely I'm not the only one.
Ok I'm sure I will be kept company soon.
You're right, you're not alone today @carieoates! I've been to the gym, cooking the fast day dinner - was very quick, - chicken puttanesca in the oven in a jiffy......and will make 2 meals for the freezer. Hot coffee on hand.
The sun is shining and the thrush is singing beautifully. I will work in the garden later, I have time as it's half term and no teaching.
Feeling positive and thinking of you and the others who will surely surface soon. All have a really good day. :clover:
I am joining you today too, in fact - here we have passed midday - so maybe another 8 hours before I can jump into bed! We have been having a heatwave here (in Johannesburg) and last week I really struggled with my fasting, absolutely no energy. Slightly cooler this week, so far so good ..... Katharina, I like the sound of your Chicken Puttanesca - is it easy to make?
@maryannemcconnell the chicken dish is lovely we think! My husband and I get three fast day meals out of these quantities and it the extra freezes well. It comes from the Fast Diet Recipe Book.(Mimi Spencer). It's a useful book and we have some favourites out of it. This is it from memory......
Serves 6, ie 2 thighs per person....Oven 180* calories = 247 per portion.
12 skinless boneless chicken thighs
4 cloves garlic chopped
20 anchovies ( or to taste) drained of oil
600 gms cherry tomatoes
2 tablespoons capers( rinse if in brine)
3 tablespoons mixed olives drained and stoned (I use what I can get, all black today)
1 tablespoon virgin olive oil (carefully measured)
In heavy casserole, melt anchovies and garlic, just a few minutes low heat. Must not burn the garlic bits.
Add tomatoes, capers and olives and heat about 5 mins. Add the chicken thighs stir around to combine.
Put in oven 15 mins covered then coat the chicken in the sauce, put back into the oven lid off, for another 30 mins.
Lots of juice forms, and I generally let it go on slow cooking to thicken. The chicken falls apart, but the sauce gets thicker, but all very appetising! We have fresh green veges with it and fresh basil leaves if have some and find it very satisfying.I hope you enjoy trying it out!
I'm feeling pleased I wasn't tempted to taste, or eat anything at all. I know it's going to be great this evening!
