Oh goodness Juliana, that soup looks heavenly. I'd love the recipe if you ever feel like giving it up.

Yes of course. I will prepare it tonight. It's a recipe that I "evolved"

I think tomorrows fast day dinner is going to be something with chicken out of the hairy dieters cook book. Either that or I'm going to make matballs out of their Mediterranean beefburger recipe and throw some tomato sauce at them. I will try and remember to take a picture.

I bought my mandoline from ProCook for about £30 and it's in constant use. A good one should come with at least 6 different blades that determine the "cut" of the food (this is how you make *shh* crinkle-cut chips, folks!) and you can adjust the thickness on the mandoline itself. It is absolutely the fastest way to shred vegetables, not just for "spaghetti" but for slaws and juliennes too.

Last nights meal

Shredded Chilli Beef on Vietnames Cabbage salad

Image

it was the best. I put in loads of chilli as i like it hot but you can vary it.

the salad part was this.

the beef was a Charmaine solomon recipe from an old recipe book i have called WOK COOKBOOK

closest approximation is this

but without the carrots that that would be fine to add.

no idea of calories for this meal but being on cabbage and no rice or noodles, would make it on the low side
