My dinner will be today Tortellini Soup with Italian Sausage & Spinach and noodles. :razz:

I always have been a fan of tomato soup. Simply love the creaminess, the rich tomato flavor and color of the tomatoes. Just imagine the added delight prepared when tomatoes get combined with spicy Italian Sausage, Spinach and Cheesy Tortellini.

Heat a medium, heavy bottomed pan over medium heat. Heat oil and add diced onion. Saute until onions are soft.
Crumble Italian Sausage and garlic with the onion. Cook until the sausage no longer appears pink.
Stir in crushed tomatoes, vegetable (or chicken) broth, salt,basil and pepper. Bring to a boil, lessen heat to low, and cover. Let soup simmer for 20-30 minutes.
Add tortellini and spinach and allow it to simmer for about ten minutes, until pasta is tender.
Serve with shredded Parmesan :cool:

well hubbie and I are out for dinner tonight we are going for drinks for a friends birthday and have decided to eat in the pub as well i have not eaen since 10pm last night and have found today to be quite hard as naughty me i was a bit hungover today too much wine last night lol but i have survived and only have half an hour to go before my eating window opens yipee
