For lunch, I had an enormous bowl of noodles, with veg and and an egg but the noodles overwhelmed everything but I ate it, still being a greedy so-and-so. Two hours later I'm hungry now! Should've just had the veg and the egg. Nevermind.

It is a learning experience, I don't find pasta, potatoes, or bread to be very satisfying, so I rarely use calories on them. Now the sauces, that is another story!
Check out the GI of noodles. Any of these soft carbs like white bread are the equivalent of eating pure white sugar for the difference the body sees. Massive influx of insulin to reduce the blood sugar, which over-compensates, then you are fooled into thinking you feel hungry within an hour or so as the blood sugar is then too low.
Most carbs have fibre, so IMO it's anything BUT rubbish!!!
TBH, the only thing that fills me up is grains, especially wholemeal. It takes forever for my digestive system to vanish them, by the time I'm hungry after lunch, it's time for dinner!

That's the point - all carbs aren't the same. Grains have fibre and are low GI, and are digested relatively slowly, whereas e.g. white bread, noodles & mashed potato are all high GI with virtually no fibre and are digested almost as quickly as white sugar.
This is why many restaurants offer you white bread before you even order. It's to make you hungrier so you order more. It's been proven that without this, people order less.

It's also a matter of what we are used to eat. For example, I don't eat any white sugar. If you give me white sugar and I manage to swallow it (I hate it) it will take me forever to digest.
One thing that I love about white carbs though is how good they are before alcohol!!! If I eat potatoes or pasta before going out, I can drink a LOT with no hangover.
