First of all, thanks to you all for your great support, I really feel like I have friends I can go to when I am happy or sad who will understand what I'm going on about.
That said, now the good news - I've lost 2 kilos this week!

I can't believe it's so much. I could feel I had lost weight and a few people commented on how I look but I never dreamed it would be so much.
I've obviously been taking the "eat what you like" mantra to its limits and it was nothing to do with my metabolism being messed up by dieting so for that I am very happy as now I know I just have to make sure my portion controls are normal and I'm not putting enough on my plate for two people.
What I've done this week is work out my TDEE which was given as 1800 so I've literally eaten around this amount for the five days, some days over, some days under as Caroline advised and then my 500 calories on the two fast days. Everything I have eaten I have put into MyFitnessPal so I could keep a track on things. And to be honest, 1800 calories is quite generous, I've been able to eat out (and have dessert) and I've swapped my diet yoghurts for some lovely creamy ones which stack up to 210 calories but what a treat

Some days I haven't been anywhere near the 1800 so I've sat in the evening eating one of these delicious things and felt very happy with myself. I've also changed my fast day from splitting the calories between breakfast and dinner to fasting all day and eating all the calories for dinner. This way, I have been able to have two very substantial meals and I think this is the way I'll do it from now on. So I've changed two variables and can't say for sure whether one in particular is responsible for the change in my weight loss or whether combined they've had the effect, but I suspect it is simply calorie counting which has seen such a weight loss.
Oh and one last thing, I've been getting recipes from the BBC Good Food website for dinners on feed days as they all have their calorie counts along with nutritional values per serving which for me has been a big help, plus I've cooked some new things this week. I even used one of their recipes for my first fast day this week - spicy falafel - delicious.
Well, thanks again for all your advice, without it I wouldn't have seen such a drop in my weight, I know that for sure. And for all of you out there who are losing slowly or gaining like I was, try calorie counting for a few weeks to get used to "normal".
I'm now off for a spa day as a reward
