I'm in today for my 3rd fast of my 1st 4:3. I'm trying 4:3 for a few weeks because the scale seems to be going the wrong way. After 7 weeks on this WOE I do hope it's working for me. I'll keep going and hope for the best. Happy fasting.

What do you mean your third fast? HAve you done three days fasting in a row?

I'm in today... Just had soup, sugar free jelly, and a hot plain cocoa with butter and coconut oil. I think I might have consumed it all a bit too piggy cos I've got major cramping going on now :(
@jmousey Sorry, I forget everyone doesn't know that my 5:2 week starts on a Friday. That's just the day I started this WOL. So this 4:3 week I've fasted on Friday, Monday and Wednesday, with my weigh in the day after my last fast (tomorrow). I know it sounds a bit messed up but I like it this way, I finish and start my 5:2 week in the middle of a normal week. When Monday morning comes around I've already done half of my 5:2 week, making it easier to continue. Then at the end of the normal week, when I'm feeling a bit demotivated I get my fresh start with the first fast of the next week. I know it's all in my head but it works for me haha.

I could've sworn I already posted this :?: anyhoo... I've had to take myself off to bed already, out of harms way! My Daughter made some mini quiches at school today and I haven't been able to stop thinking about them :doh: I'm not going to give in though cos one will lead to two, two will lead to three, and then I'll have to make it an even number and have a forth etc etc etc!! I don't even know why they're doing my head in so much, I'm off all things carby so I wouldn't have one anyway :curse: or would I...... D'oh!!!!!!!!!

Take a large eggplant and slice it into rounds (about 1/2 inch if you're thinking about it). Spray both sides with a bit of oil spray and season with salt, pepper and any Italian seasoning you want. Bake for about 8-10 minutes on 200 degrees Celcius (or until browned).
Top with some chunky tomato sauce (I used a store bought one that was low in fat) and a bit of cheese and grill for another 10-15 minutes, or until the cheese is melted and browned.

Voila! Mini Eggplant Pizzas! And they're really tasty :like: :victory:
