How you use the calories is up to you, as long as you don't go over your limit.
There is evidence that eating mostly protein is a good way to sustain you over the fast period and will help keep hunger a bay. Our bodies can't produce its own protein, so it is vital that you eat some.
It sounds like you fasted all day and ate your calories in the evening. This is according to the small amount of research that has been completed on this way of eating produces the best health benefits (for men, the juries out on women).
I think your menu not only sounds right, it sounds yummy and you should post the recipe. Well done

Most of the clinical trials had 30g or less of protein on the "fast" day and the breast cancer 2-day diet is <40g of carbs on 2 days, so if you like evidence based things I would suggest limiting carbs and protein to these numbers (which gives you up to 280 calories) and getting the rest from fats & oils.
Eggs and cheese fit that ratio well, as does oily fish like mackerel.

Good luck and don't worry about the pro-portions of proteins etc, because when you are restricting to 600 cals you can't do any damage at all really. Just eat really well with the freshest ingredients and don't fill up on sugar; the bodies worst enemy.
