For example, it's helpful to know your BMI/weight, how much you want to lose, any medical conditions which might affect your weight and (if you've started fasting already) how you do your fasts in terms of splitting up your calories, what you eat etc. Thanks!

It's really a no-brainer, just sensible eating, IMO...
I think you know that to gain the way you have you must have been going well over on your feed days.
2000 cals a day would probably give you a slow loss. It's 11,000 cals over a week which isn't excessive.
But as has been said it's very very easy to go over if you are not careful. Fat, and sugar are horrendously high in cals and if you've been eating with abandon on 'feast' (feed) days that'll be where you're gaining.
I would say that you need to monitor your intake more closely, I know it's a drag, but to do it for a couple of weeks will give you valuable insight into what is a normal amount of food for you to maintain your weight so that the fast days count for something.
