Hey I'm new to the site

I have been fasting for a while for different amounts of time but I haven't been doing the 5:2 method until these last 2 weeks. I'm good when it comes to the fasting but my problem is on the other days I don"t think I eat enough. I do eat but I'm vegan and I only eat till I'm comfortable. I might only eat 1 or 2 times a day and it's not much. I know I need to eat more but I just don't. I need some accountability for actual eating. I need to set up an eating schedule but i'm not sure how to do it. I also need a menu of what I need to eat each day. I know what I need to do but I start doing it and I get so overwhelmed that I stop doing it. Thanks for reading this and any help you can give me would be great.
