I'm used to eating big portions so naturally smaller portions don't fill me up as much as the larger ones so I'm wondering at what point does your gut shrink and smaller portions don't make you feel as hungry?

I think you start finding yourself filling up quickly fairly soon after starting fasting. Some people go through a bingeing phase early on, but soon after that the appetite really decreases.
The brain however, takes longer to educate! 6 months in and I'm still putting too much on my plate even though I'm taking smaller portions.

I'm not able to put an exact time line on it but your appetite does decrease. I would have laughed a couple of months ago if anyone had suggested eating the amounts I am now. I always had a heaped plate, mostly the "filler" e.g. potatoes, rice, pasta (government guidelines, right?) with a hearty portion size of fish, chicken or meat and a portion of veg. Now, my plate is still full, but mostly with veggies, a "normal" portion of protein approx. 150 grams, and a small amount of rice, pasta or potatoes (about 2 small new potatoes) and sometime I skip that part altogether and have a bit more broccoli, asparagus or green beans instead. This transition was fairly gradual and I really love my salads and veggies now. I am eating more fat too, especially coconut oil, butter and olive oil and I don't feel hungry between meals any more, so almost never snack. The other thing I have noticed is a big decrease in my wine consumption. I always felt my evening meal wasn't complete without a glass or two and maybe another glass later in the evening, and now I drink wine a couple of times a week. So look forward to changes, they do seem to follow!

It is not the same with everybody, I can still eat a cow and ask for dessert...
