I started with three meals, and quickly stopped breakfast on fast days. I did
split my cals between lunch and dinner for some time, but found myself waiting until later and later in the afternoon to eat my lunch. So for a few fast days, I'd bring a hardboiled egg to work in case I got hungry. Mostly I did not need it, so stopped that and just saved my cals for the evening meal.

I am on maintenance now, and I still do not eat breakfast before 9 AM, and can wait until noon eat even on regular days!

I would stay with 2 days of fasting a week, 3 at most. You have only been at it a short while so too early to get discouraged or change you plan. Are you cuting back on carbs? that would be my suggestion before adding fast days.
I have 200 calories at breakast, lunch, and dinner and find that works very well for me - I MUST have breakfast and see no need to have a bigger meal in the evening.
