You could try this recipe I did a while back @Loulou51 - I thought the artichokes sufficiently tasty that I determined to cook with them again; I think that they do have a strange taste and distinctive texture, so guess they're not everyone's bag...

Method: 1. fry onion until softened; 2. add garlic, chilli, bayleaf and thyme and cook for a couple of minutes; 3. add kale and cabbage and 'stir-fry' for a few more minutes; 4. add tomatoes and marjoram and simmer for about 5 minutes; 5. add the beans, keep warm aside; 6. heat oil on a medium heat and fry the sunchokes and garlic for a few minutes; 7. season, add rosemary and wine, and turn up the heat until the vino is half-reduced; 8. cover and simmer until the sunchoke is tender (took more than 5 minutes) then add the cream and mix in well, off the heat; 9. layer the tomato sauce at the bottom of a grill-proof dish, layer the sunchokes on top, then layer the sliced taleggio on top of that, grind some more pepper on top of that; 10. grill until golden brown and bubbling.

Thanks to @FatDog for the informative blogs + recipe ideas and @PennyForthem and the spicy butternut squash idea and yes I put in everything the jewson lot!!
OK I've overdone it because I did far too much and of course my inner self didn't tell me when to stop because they were all so tasty I only managed half a chicken breast.
I'm guesstimating I haven't gone over my cals but I'm so full now I can barely type to say :heart: Thank-you one and all for being patient with me, from this day on more of these type of veggies you can keep the green ones for now. :heart: :heart:

I'll go and pester @callyanna later in the more fat tent coz I'm trying to take some of that in also.

:heart: Yes @callyanna My Friday weigh-in 1kg up must have been water but it gave me the kick up the bum I needed, I don't usually weigh after a weekend but I did take some of my medication for water retention sat/sun so that helped and I'm back on the straight and narrow again now.

except I still haven't washed up I'm so ffuuullllll :heart:

Thanks for asking, @callyana. Well, I am very new to the concept of low carb diet. I have been on 5:2 woe since april last year, and the last 3-4 kg just wont shed, and more worrying, they are tired up around my stomach in the most unhealthy way. So I was encouraged to try low-carb by knowledgable forum members, and here I am, trying to read up and learn about low carb.

Presently my strategy is trying to figure out how much carb is low-carb. In the meanwhile, I just am cutting down on anything starchy. I cannot see a total no-carb diet, life without ryebread would be too hard. :geek:

Luckily, I do not have sweet tooth, so cakes and candy and the like have never been much of a problem. So I am here to learn. If I cut down on carb, what can I then increase, protien and fats, in which proportions?

:heart: Sometimes the small changes make big differences as in my case @pben My starting point was 16:8 so cutting out my very carb laden breakfasts also dropping the bread from my lunchtime sandwich I just pile up all the ingredients on a plate and add extra salad stuff, then my next move sometime later was to halve my potatoes and bulk up with loads of veggies and now including my new "ugly" variety, I'm trying to pull back a little with rice + pasta but that's the best for now and all veg have some carbs but the good type.

I've still got loads of weight to lose so my problem is totally different to yours but the changes in certain health issues I have is absolutely enormous that said I'm never going down that road again. :heart: :heart:

Thanks for that callyanna. It does contradict itself - it has 2 different carb readings for celeriac for example. But still, very useful.

Kind of inadvertently completed a 16/8 fast today with 1800 calories and 91g of carbs. Full!
